Alpha Works Omelette

Use my special way for omelettes.

This filling omelette has it all, from sausages, to veggies, to bacon. You can use any ingredients you want.

You can't go wrong with Chef’s omelettes.

I have my own special way of making omelettes. I learnt this way to make omelettes working in a popular café and adopted it. I used a Salamander grill there. It's an oven-like appliance used for grilling, broiling, glazing and toasting. The name Salamander comes from a mythical beast that lived in fire and could control fire.

Makes 1 Serve

RECIPE

Preparation & Cooking Time: Roughly 40 Minutes

Eggs 3 if larger, 4 if medium/small

1/2 Chorizo, Sliced

1 German Otto Wurth Frankfurt. Sliced

1 Button Mushroom, Thick Slices

1/4 Zucchini, Sliced

1 Tomato, Medium Dices

1/4 Spanish Onion, Thin Slices

1/8 Capsicum (Bell Pepper), Thin Slices

8 Slices Olives, any variety

1 Handful Baby Spinach

1 Rasher (Slice) Bacon, Thin Slices

100 Grams Butter for Cooking

1 Green Onion (Shallot, Scallion), Thin Slices

Cheddar, or any other Cheese, to Taste

INGREDIENTS

DIRECTIONS

Roughly slice all the vegetables. Set aside.

Slice the sausage, chorizo and bacon. Set aside.

Heat up some butter in a pan and add the chorizo. Cook until browned. Keep the butter and fat in your pan. This will add flavour. On a paper towel, drain the chorizo.

Whisk the eggs until fully mixed.

Melt some more butter on medium-low heat to cover the pan.

Once melted, add your eggs.

In layers, add the chorizo, baby spinach and tomatoes. Pressing everything in each time to bind with the eggs. Make sure you're fast adding your ingredients of your egg will cook before you add everything in.

In layers, add the olives, frankfurts and zucchini.

In layers, add the spring onion (shallots, scallions), capsicum ( bell peppers), onion and mushrooms. In layers, add the bacon and cheese.

Cook until the middle is only slightly runny, then place under the Salamander (Grill) or in the Oven. Bake until the cheese browns and the centre is done.

I like to remove the omelette using a spatula. Enjoy!
