Banging Banana Bread Biscotti

This isn't a crunchy cookie like you would normally expect, but nice and soft like banana bread.

I make this often. They make good snacks. I also add some caramel topping since it tastes great with the banana. It's soft like a bread, but made the same way I make all the cookies.

RECIPE

Makes Roughly 24 Cookies

Preparation & Cooking Time: Roughly 40 Minutes

INGREDIENTS

125 Grams Butter Softened

1/2 Cup Sugar or Caster Sugar

1/2 Cup Brown Sugar

1 Egg

2 Bananas (roughly 230 Grams)

2 Tablespoons Caramel Topping

1 1/2 Cups Self-Raising Flour

DIRECTIONS

Heat the butter in the microwave for 15 seconds to soften it. Put the softened butter, brown sugar and sugar in a mixing bowl. Mix for a minute, or until fully combined.

Add an egg. Mix for a minute, or until fully incorporated.

Slice the banana. Add flour, caramel topping and banana to the mixture. Mix for a minute, or until combined.

Oil the tray or line it with baking paper. Preheat the oven to 180 degrees Celsius. Each cookie should weigh about 30 grams. Shape the dough into a ball in your hand, then flatten it out. You can use a spoon if you wish. Place the cookie dough on the tray, leaving enough space for it to expand. Put them in the oven for 10 minutes or until slightly browned. Once baked, let it cool for a minute before transferring into a cooling rack. You may need to cook the cookies in batches.

Let them rest on a rack to cool. Enjoy!
