Big Fat Brekkie

Want to spoil someone for brekkie or have a lazy day off? Make a Big Fat Brekkie!

If you eat a lot for breakfast, this one's perfect! Or if you skip breakfast like me, this makes a good brunch or even dinner!

Extra hungry? Fill up on a big brekkie!

You can use any bread you like. You can even add a sausage like most big breakfasts.

RECIPE

Makes 2 Serves

Preparation & Cooking Time: Roughly 40 Minutes

40 Grams Onion, Sliced

2 Tomatoes, Cut in Half

50 Grams Mushrooms, Cut in Half then in Slices

100 Grams Zucchini, cut in Half then in Slices

50 Grams Capsicum (Pepper) I used a Banana Chilli, Sliced

2 Sour Dough, Big Slices

4 Rashers Bacon (Bacon Slices), Cut in Half

6 Eggs

100 Grams Butter for Cooking

DIRECTIONS

Slice up the capsicum (bell peppers). Halve the tomatoes and zucchini. Then, slice the onions, mushrooms and halved zucchini. Cut the bacon in half.

Heat butter in the pan on medium heat.

Lay the bacon on the pan. Cook for 30 seconds. Add the tomatoes.

In another pan, heat butter on medium heat. Add on sliced onion, mushrooms, capsicum (bell pepper) and zucchini.

Once the tomatoes and bacon, onion, mushrooms, capsicum (bell pepper) and zucchini are almost cooked, add in the eggs and cook toast. Cook to your liking for roughly 3-5 minutes.

Plate your food however you like! It's only YOURS to enjoy!
