Chefs Auflauf (German Potato Bake)
A German inspired potato bake.
I make this when I have odd bits of meat left in the freezer. I use frozen vegetables but it’s fine using fresh vegetables. You can leave the cheese out and have a very healthy bake.
A great way to use any odd meat you have.
This is basically a German style potato bake that is very simple to bake. It is a great tasting and flavoursome dish. Chef recommends giving this recipe a try.
RECIPE
Makes 2-4 Serves
Preparation & Cooking Time: Roughly 2 Hours
4 Potatoes
1 Spanish Onion
800 Grams Meat
60 Grams Broccoli
60 Grams Cauliflower
1/2 Teaspoon Cayenne Pepper
Pinch of Cracked Black Pepper
Pinch of Salt
3 Tablespoons Olive Oil
140 Grams Mozzarella Cheese
1 Tablespoon Rosemary
1 Tablespoon Dill

DIRECTIONS
Cut the potatoes and meat into chunky dices. Slice the Spanish onion. Add all the ingredients besides the cheese in a bowl and toss to mix.
In a large baking tray lay down some baking paper on the bottom. Evenly spread all the ingredients from the bowl. Place another layer of baking paper on top.
Cover the tray with foil and put in the oven for 1 hour on 180 degrees Celsius. Take the tray out of the oven and remove the foil and the top layer of baking paper. Spread the cheese over the top and bake for 20 minutes or until the cheese is golden brown.
Once it's ready, take it out to serve. Plate it up however you like. Enjoy!
