Chefs Special Chicken Rolls

You won't regret making these. Great for Quick Meals.

I got the idea from when I was younger and would buy these for a quick hot meal. They come frozen and you microwave it, but with Chef’s special chicken rolls, you can eat them fresh. You can use leftover chicken from a roast if you like.

Warm mayonnaise sounds off but it works and is delicious!

If you can get the original rolls with sesame seeds on it, that's great! I can't find them here anymore, so I use baguette or a good bread roll. Make sure it's not real skinny, but slightly wider. You can use any hot dog rolls or long rolls as you like. I usually eat one and freeze the rest. To freeze it, wrap it in cling film and put it in your freezer. When you eat it, microwave it until warm and enjoy.

RECIPE

Makes 3-6 Rolls

Preparation & Cooking Time: Roughly 20 Minutes

1 French Bread Stick (Cut into Thirds or as Long or Short as you like) or Six Long Bread Rolls

1 kg Grams Chicken Breast or Thighs, Medium Dices or Left-Over Roast Chicken, Shredded

3 Cups Mayonnaise

2 Tablespoons Thyme

2 Tablespoons Rosemary

You can use your favourite hot dog roll. I used to use seeded rolls but can no longer find them. If you are using a baguette roughly slice the baguette into 3 equal lengths, or however long you like.

Roughly dice or shred the chicken into medium sized chunks.

Prepare the mayonnaise. Set aside.

In a pan, heat up oil on medium-high heat. Add the chicken or heat it up if it’s already cooked.

When the chicken is Partially cooked add the rosemary and thyme. Toss until fully combined.

Once the chicken is cooked or heated up add your mayonnaise. Mix until fully combined.

Cut the rolls and microwave them until warm. This should take about half a minute.

Evenly spread your chicken mixture on each roll

Assemble the roll. Enjoy!
