Lovable Lambs Fry and Bacon

Even if you’ve never heard of or eaten lamb’s fry before, you’d certainly love this recipe!

I was shown this recipe from my dad, who learnt it from his mother and grandmother. A rustic dish that does not disappoint. I make this often. If you have never had lamb’s fry before or are too scared to try it, try this recipe.

I always look forward to the umami that bursts out of the juicy meat.

It's a good winter dish but can also be eaten in summer. It’s also incredibly easy to make. You can have it with bread or it’s wholesome on its own. If you’re wondering what a lamb’s fry is, it's the liver of a lamb. It doesn't sound appetizing, but trust me, it is delicious cooked this way.

RECIPE

Makes 2-4 Serves

Preparation & Cooking Time: Roughly 40 Minutes

1/2 Cup of Flour

220 Grams - 2 Rashers (Slices) Bacon, Roughly Siced

280 Grams Lambs Fry, Thinly Sliced

150 Grams - One Large Brown Onion, Sliced

2 Tomatoes, Cut into Six - Eight Pieces Depending on the Size

Butter, You will need a fair bit

Salt to Taste

Pepper to Taste

Worcestershire Sauce to Taste

INGREDIENTS

DIRECTIONS

Slice the tomatoes into six or eight pieces, depending on their sizes. Slice the onion. Roughly slice the bacon.

Thinly slice the lamb’s fry diagonally. In a freezer bag, put the lamb’s fry and flour. Shake until fully coated.

Add some butter into a pan. Once hot and melted, add the lamb’s fry. You want to turn it a few times and make sure it doesn't stick. Also, add more butter it starts to stick. Remove your lamb’s fry once brown and cooked through. Set aside.

Add some more butter. Melt it. Add the tomatoes. Cook them until they start to turn brown and almost cooked through. They will be soft. Set the tomatoes aside with the lamb’s fry.

Add more butter and melt it. Add the onion. Cook them until sautéed. They will start to brown up and become translucent.

Set the onions aside. Add more butter. Add the bacon. Cook it however you like it. I like mine slightly crispy.

Add the tomatoes, onion and lambs fry, and also more butter if needed. Cook for a minute, tossing to mix. Once fully combined and cooked it’s ready to eat.

Plate it however you like, adding salt, pepper and Worchester sauce to taste. Yum enjoy!
