Macho Mushroom Pasta
You won’t even know there is no meat in his pasta.
I love making this and enjoy it with a side of garlic bread. Just a basic buttery, garlicy and mushroomy sauce that makes a great vegan dish. You can add chicken and some cheese for a non vegan version.

You can use any herbs and spices you like but I enjoy this dish with basic flavoursome herbs and a touch of lemon juice so it doesn’t over power the dish but adds to the flavour.
RECIPE
Makes 1-2 Serves
Preparation & Cooking Time: Roughly 30 Minutes
INGREDIENTS
200 Grams Mushrooms (Button/Cup or Flat), Large Slices
25 grams- 4 Cloves Garlic, Roughly Chopped
80 Grams Margarine or Vegan Butter
1/4 Teaspoon Dried Rosemary
1/4 Teaspoon Dried Parsley
1/4 Teaspoon Dried Oregano
1/2 Tablespoon Lemon Juice
40 grams- 2 Spring Onions (Shallots, Green Onion, Scallions), Sliced
180 Grams Dried Penne Pasta
1/4 Cup- 60 Millilitres Master Stock
1/2 Teaspoon Cracked Black Pepper to Taste
1/2 Teaspoon Salt to taste
DIRECTIONS
Add water into a pot large enough for the pasta. Add a teaspoon of oil and a pinch of salt. When the water boils add your penne and cook per pasta instructions, roughly 10 minutes. While the pasta cooks prepare the other ingredients.
Cut the end of the garlic, then crush it with a knife. Peel it. Dice it up and set aside.
Slice the spring onions (shallots, green onion, scallions) and mushrooms. With some of the spring onion (shallots, green onion, scallions) thinly slice it to matchstick length and place it in water this will make it curl and is a great garnish. Weigh the margarine.
Drain and wash the pasta. Add a small amount of oil on the pasta and mix, this will stop it from sticking. In a pan add a splash of oil and the margarine. Cook on medium high heat
Once the margarine is almost melted add the garlic and cook it until fragrant. Add the herbs and cook for a further 1 minute. Add the mushrooms and shallots and toss through.
Once the mushrooms are half cooked and have absorbed some of the butter add the stock and lemon juice. Cook for about 2 minutes until the mushrooms are cooked.
Add the pasta and toss to coat. Mix the pasta through and cook until some of the sauce has reduced. When its cooked down enough to your liking serve in and enjoy!
