Mums Caramel Slice

A great snack for the kids.

I remember helping mum make this as a kid. Making a caramel slice sounds complicated, but it's really easy to make. To this day, I haven't changed this recipe.

Not very healthy, but it's a great treat.

Recipes like this are made less now days besides in cafes but in most cafes they order them in. Most people have a healthier approach to food but these taste amazing and are a great treat or dessert.

RECIPE

Makes Roughly 30 Squares

Preparation & Cooking Time: Roughly 2 hours & 30 Minutes

INGREDIENTS

Base

1 Cup Soft Butter

2 cup coconut

2 cup self-raising flour

1 cup sugar

Caramel Middle

3x 375 gram tins of condensed milk

3 Tablespoon butter

6 tablespoons maple or golden syrup

Chocolate Icing

3 cups icing sugar

6 tablespoons boiling water

2 tablespoons rich cocoa powder

DIRECTIONS

In a large mixing bowl, add all the ingredients for the base. With your hands, massage the ingredients until you get a fine crumb.

I use a 30cm long x 25cm wide x 2.5cm deep baking tray. Layer it with baking paper and grease the paper with spray oil or use a brush with oil. Spread the crumb mixture on the tray evenly and press hard with a spatula. Cook in the oven for 15 minutes on 180 degrees Celsius.

In a pot, add all the caramel sauce ingredients. Cook on a medium low heat, constantly stirring for 15 minutes or until it turns thick and a brown colour. Don't let it boil. You may have to take it on and off the heat as you stir. Once the caramel thickens and changed colour, take it off the heat. This should be around the same time the base is cooked. After 15 minutes in the oven, the base should be slightly brown. Take it out.

Add the caramel on the base, spreading it out evenly with your spatula. Place it back in the oven for 10 minutes on 180 degrees Celsius. After 10 minutes, your caramel should have turned more brown. Let it cool for 10 minutes until its slightly warm. Once the caramel has been cooled. Use a bowl, add the chocolate icing mixture, and mix to combine. Evenly spread it over the caramel evenly using the spatula again. Let it cool for an hour, then place your slice in the fridge until the topping has hardened up.

Cut into slices. You can eat fresh, store in the fridge for up to 2 weeks or in the freezer for 2 months. Enjoy!
