Oh My. Smoked, Chilli and Veal Tortellini Pasta

A chef’s original recipe.

I always make this when I have tortellini or you can use this recipe with any pasta you prefer. Its hard to get this pasta wrong, as nothing has to be perfect. A great dish for beginners to try.

One of chef’s favourite pastas

I use fresh store bought tortellini but its ok to use any type you like, you can even make it from scratch. Any cheese if fine but tis nice with parmesan on top.

Makes 1 Serve

Preparation & Cooking Time: Roughly 30 Minutes

INGREDIENTS

180 Grams Fresh Veal Tortellini

100 grams-1/2 Medium Onion, Small Dices

30 grams-Medium Cayenne Chilli (Red Pepper), Thinly Sliced

70 Grams Champignon Mushrooms, Roughly Sliced

2 Cloves Garlic

1 Rasher (Slice) Bacon, Small Dices

1 Tablespoon Olive Oil

Parmesan Cheese to Taste

Pasta Sauce

2 Teaspoons Hickory Liquid Smoke

1/2 Teaspoon Smoked Paprika

1 Teaspoon Italian Herbs

1/2 Cup Chefs Napolitana Sauce or Pasta Sauce. Recipe Here:

DIRECTIONS

In a pot, add water, a touch of oil, a touch of salt and the pasta. Cook the pasta per packet instructions or bring to the boil and simmer, for roughly 20 minutes. While your pasta cooks prepare the onion, bacon, garlic, mushrooms and chilli (pepper). Set aside.

This is the liquid smoke I use. In a bowl, add the pasta sauce ingredients, mix them together and set aside. Drain the pasta, add a touch of oil and mix it through. This stops it from sticking together. Set aside.

in a pan, add 1 tablespoon of oil and heat on high heat. Add the bacon, onion, garlic, mushrooms and chilli (pepper). Cook for roughly 2 minutes until sauteed (until the onions are clear).

Turn the heat down to medium low heat and add the sauce. Simmer for 5 minutes until the sauce has reduced a little. Add the pasta and toss through. You want the sauce to stick to the pasta. If the sauce is too thin, simmer it for a bit longer until the sauce has thickened and coats the pasta nicely. If it’s too thick, Add a touch of water and stir it in, then cook till desired thickness. It doesn’t matter too much as it doesn’t have to be perfect.

Plate up and Serve with some parmesan cheese on top. Enjoy!
