Peeping Pigs in Blankets (Devon Rolls)

A great appetizer for parties!

This was a hit at parties when I was a kid. I still make them to this day. Ok, they aren't a fancy entrée but they taste great and are cheap to make.

This will be an instant hit!

We called them pigs in blankets but proper pigs in blankets are a wrapped frankfurts. The proper name of these is devon rolls.

RECIPE

Makes 8 Rolls

Cooking & Preparation Time: Roughly 30 Minutes

INGREDIENTS

8 Slices Devon (Baloney)

300 Grams Potatoes, Peeled and Diced into Cubes

5 Grams Chives, Finely Sliced

15 Grams Butter

1/2 Cup Milk

Salt to Taste

Pepper to Taste

DIRECTIONS

Peel and dice the potatoes. In a pot add the potatoes and enough water to cover the potatoes. Cook until the potatoes are soft. Roughly around 20 minutes.

Roughly chop the chives. Add the milk, butter, salt, pepper and chives, then mash. You want it looking nice and creamy. Add more milk if needed.

Place the devon (baloney) down on a flat surface. Add a good amount of mashed potato in the middle. Roll one side up. Then on the other side, so a small amount of the devon (baloney) overlaps. Use a toothpick to hold it together.

Place them on a platter. Enjoy!
