Slow Cooked Shredded Chicken

Chefs secret slow cooked shredded chicken recipe.

I Cook this recipe about twice a month to go on my wraps for lunch almost daily. Its a good and healthy way to meal prep shredded chicken. This is a slow cooker recipe. You can alternatively use a pot or large pan on a stove and cook on low heat but you may want to check and turn the chicken more often. You may also need to add more liquid.

A flavoursome shredded chicken recipe.

You can add any herbs or spices you like and use chicken stock or water instead of master stock. You can also brine the chicken but its not necessary. This is a easy way for fantastic and juicy shredded chicken.

RECIPE

Makes 4-6 Serves

Preparation & Cooking Time: Roughly 3-4 Hours

INGREDIENTS

2 Chicken Breasts

2 Chicken Thighs

1/2 Teaspoon Ground Cumin

1/2 Teaspoon Dried Rosemary

1/2 Teaspoon Dried Basil Flakes

1/2 Teaspoon Dried Chopped Chives

1/4 Teaspoon Ground Coriander (Cilantro)

1/2 Teaspoon Onion Powder

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Cayenne Pepper

1/4 Teaspoon Ground Hot Chill

Salt to Taste

Ground White Pepper to Taste

1 Tablespoon Lime or Lemon Juice

3/4 cup- 177 millilitres Chicken Stock or My Master Stock

DIRECTIONS

In a slow cooker add all the ingredients besides the chicken. Stir to mix. Add the chicken and moving it around and turning it over to coat all the chicken. Place the lid on and cook on high for 2 hours.

After 2 hours turn it over and cook the chicken for another 1-2 hours. After an hour check the chicken. You want it thoroughly cooked but juicy and easy to shred.

To shred the chicken use two forks, stick them in the chicken pieces close together and move them apart. Take out any bones. The chicken will soak up the juices as you shred it. Enjoy!
